Lardy Gravy

INGREDIENTS

  • 3 tablespoons Fatworks Pure Lard
  • 2 tablespoons cassava flour
  • 1 cup coconut cream
  • 2-3 cups broth or stock
  • Sea salt and black pepper, to taste

DIRECTIONS

STEP 1

Add the Pure Lard to a medium saucepan over medium-low heat. Once melted, sprinkle the cassava flour over the melted lard. Whisk continuously until the flour is dissolved and begins to darken in color, about 3 minutes.

STEP 2

Add the coconut cream and continue to whisk. The mixture should thicken up significantly. Add 2 cups of the broth and continue to whisk until the gravy is smooth. Cook for 5-10 minutes at medium-high heat to thicken the gravy further. If a runnier gravy is preferred, continue to add more broth in ¼ cup increments until the desired consistency is reached.

STEP 3

Remove from the heat and season with sea salt and black pepper, as desired. The gravy will thicken as it cools. The lard gravy will thicken as it cools.
