Pure Lard Hearty Veggie Beef Chili

INGREDIENTS

  • 1 pound ground beef
  • 2+ tablespoons Fatworks Pure Lard
  • 1 white onion, chopped
  • 4 carrots, chopped
  • 2 zucchini or yellow squash, chopped
  • 1 red bell pepper, chopped
  • 1 tablespoon tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon sweet paprika
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 2 teaspoons garlic powder
  • 1 ½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 28-ounce can crushed tomatoes
  • 1 cup bone broth or stock
  • Optional for topping: coconut cream, avocado, chopped parsley

DIRECTIONS

STEP 1

Brown the ground beef in a large stock pot with the Pure Lard. Remove the ground beef from the pan and set aside for later. Sauté the chopped onion and carrots over medium heat until softened, about 3 minutes. Add the squash and bell pepper and continue to cook another 5 minutes. If the pan starts to appear dry at any point, add more Pure Lard one tablespoon at a time.

STEP 2

Add the tomato paste, smoked paprika, sweet paprika, chili powder, dried oregano, garlic powder, sea salt, and black pepper. Cook for 1 minute to warm and deepen the flavor of the tomato paste. Add the crushed tomatoes and bone broth and stir well. Turn the heat to medium-low and simmer for 15 minutes. Remove from the heat and serve with toppings, as desired.
