Garlic & Herb Paleo Breakfast Potatoes

When it comes to potatoes you really can't go wrong with either Fatworks Tallow, Lard, Chicken Schmaltz, or Duck Fat. It's potatoes and it's garlic. It's Paleo Porn indeed with these garlic breakfast potatoes! Follow our garlic and herb paleo breakfast potatoes recipe down below.

INGREDIENTS

  • 2-3 pounds organic red potatoes
  • 3-4 cloves garlic, minced
  • 3 teaspoons Fatworks Lard or other cooking fat
  • Coarse ground sea salt, to taste
  • Dried herbs, to taste
Prep time: 10 minutes
Cook time: 1 hour
Servings: 3-4
Fat: Duck Fat, Leaf Lard, Pure Lard, Pure Tallow

DIRECTIONS

STEP 1

Preheat the oven to 350° F.

STEP 2

Cut the potatoes in half and slice each half, making sure the slices are all the same thickness so they cook evenly. Add cut potatoes to a glass oblong baking dish.

STEP 3

Scatter minced garlic across the top of the potatoes and season with dried herbs and sea salt. (Choose the dried herb of your choice: dill, oregano, basil, savory, chervil, rosemary, thyme, sage, chives, tarragon, etc. Combine a few or change it up each time to produce a different flavor each time.)

STEP 4

Scatter half a spoon full of lard (or your choice of fat) evenly across the top of the potatoes and transfer the dish to the oven.

STEP 5

Bake for 30 minutes and toss the potatoes. Rotate the dish in the oven and bake another 30 minutes or until the tops start to brown.

STEP 6

Remove the dish from the oven and serve warm.
