Pasture Raised Leaf Lard: comes from the the prized pig "leaf" (kidney fat). The leaf does not have muscle tissue and therefore makes the flavor less "porky" tasting than our Pure Lard which is made from back fat or belly fat. Therefore, Fatworks Pasture Raised Leaf Lard is in theory a lighter "more neutral" tasting fat. Bakers have cherished Leaf Lard for generations for making crusts, frosting, cakes and other pastries. Leaf Lard has the same naturally high smoke point as our other fats, making it perfect for frying and sautéing, especially when you want the natural flavors of your ingredients to shine. Pasture Raised Pure Lard: Whereas Pastured Leaf Lard is prized for it's light and neutral profile, our Pasture Raised Pure Lard is desired for its FLAVOR! Fatworks Pure Lard is primarily rendered from "Back Fat", sometimes called "Fatback." So, in summary, back fat is where it's at, and Fatworks is bringing fat back! Why in the Lard's name do we make this so confusing? Anyways, this is lard made for the pan, and is recommended for adding natural mild pork flavor to your dishes. Although we love it as a a great lard for frying and sautéing you can most certainly bake delicious crusts and pastries with Pure Lard just as you would with Pasture Raised Leaf Lard. Who knows, you may prefer it to Leaf Lard.
